Dr Chester Kuma – The Glycemic Index


– I’m Dr. Chester and I’m
with the 10,000 Toes Campaign. This afternoon I will be sharing with you an important concept
called the Glycemic Index. Every food with carbohydrates
in them have Glycemic Index. So, white rice being a
carbohydrate has a Glycemic Index. Sugar, pure sugar being a
carbohydrate has Glycemic Index. Brown rice, being a food
that has sugar in it, has glycemic index measurement as well. Pure sugar has a Glycemic Index of 100. Now the Glycemic Index is a measure of how each of these foods
would affect the breakdown of sugar inside the body. So with a 100 Glycemic
Index of pure sugar, we compare all foods with
carbohydrates with pure sugar. So pure sugar becomes the standard food. White rice has a Glycemic
Index of 70 to 90. Brown rice has a Glycemic Index of 55. So you can already see that brown rice is a much safer food
to have than white rice which has a lot of sugar inside it. (light music)
